The one your arm does not stick to
Spacer fabric is an open three dimensional knit, so air moves through it rather than being trapped against the surface. On an armrest that is more useful than anywhere else in the interior.
A bare forearm resting on vinyl or leather in summer sticks, and after twenty minutes it is genuinely unpleasant. Spacer fabric is the material that solves that, and it is on the lower of the two price tiers.
What you give up
Looks, in a classic. Spacer fabric reads as modern and technical, and in a car being put back to original specification it will be the thing that looks out of place.
It also holds dirt more readily than vinyl does. It brushes out, but it will not wipe clean in the way a hard surface does.
