The Mk2 is the cheap way into a proper Volkswagen build and the aftermarket behind it is enormous. GTIs and 16v cars are the ones being built, though a great many Mk2s end up as engine swap projects where the standard seat was never going to keep up.
Values are moving
Good Mk2 GTIs are worth real money now, which makes a bolt in frame the right call: it picks up the factory mounting points, so the original seats come out whole and go back in. Mk2 Recaro interiors in particular are worth money on their own.
Check the floor properly
Mk2s rust and thirty five year old ones that have been used deserve a serious look with the carpet up. A subframe can only feed seat load into sound structure.
What else you need
Side mounts and the seat. Two bolt patterns, not one. Sparco, OMP and Corbeau base mount seats share the 345mm by 271mm spacing and bolt straight on. Recaro use 405mm by 290mm and the frame carries that as well. Cobra sit on their own 291mm by 330mm pattern, so those need multi hole side mounts.

Do I keep fore-and-aft adjustment?

Base mount or side mount, and does it matter?
