The shell is the reason, the Signature is the finish
920mm tall, 400mm wide, 580mm deep, at 9.5kg. Tall and very narrow, which is the combination a seven style car needs if the driver wants real shoulder support, and there are very few seats that manage both.
The Signature treatment is the trim on top of that. So choose the Turbo shell because it fits your car and holds you properly, and choose Signature because you want the finish. The standard Turbo is the same seat underneath.
What the height buys you
Support above the shoulder line. In a low sided open car that is also where wind and fatigue come from, so a tall shell does more than hold you in corners.
The cushion is short at 580mm, which follows from packaging the seat into a narrow cockpit. In a car where your legs are stretched forward it is less of a compromise than the number suggests.
